1. Mix all the filling ingredients together in a large bowl.
2. Cut the pastry into 24 circles, making half slightly smaller, as they will be the tops.
3. Place the larger pastry circles into well greased patty tins, divide the filling among them and cover with the smaller circles.
4. Sprinkle with sugar and bake in a preheated oven at 392°F for 25 minutes. Serve hot or cold.
